It is vital to closely control your yield. Different tools can help you do so. For example, once connected,  Rice Lake's or Mettler Toledo's weighing systems become important allies by helping you avoid deboning processes that are not optimal, overcooking or prolonged storage in refrigerators which can trigger finished product weight loss, packaging rejects or non-edible rejects (metal detectors). 

Real-time monitoring also allows you to control in real time the percentage of brine that is injected in order to avoid manufacturing products that do not respect their targeted weight.
